In fact, it's so beloved that it's been adopted as Colombia's national dish. This hearty meal usually contains white rice, red beans, ground or minced meat, plantain, chorizo, corn, pork rinds, fried egg, arepa, and an avocado. The ingredients can vary from one city to another and from one restaurant to another, adding or removing certain ingredients. Serving size can also vary between the full meal and half or quarter of the traditional plate size. Lechona is a mixture of chickpeas, pork, spices and occasionally rice (depending on the area) that is often served with an arepa. Traditionally this blend of ingredients is slow-cooked for up to 10 hours inside a whole hog roast that infuses all the flavors together and creates a delicious dish. While Lechona can be found in restaurants throughout Colombia, it is native to the Tolima region, which is southwest of Bogotá and contains the major cities of Ibagué and Espinal.
