Be that as it may, chickpeas are probably one of the most used legumes in the Spanish recipe book. And it is not for less, because their great benefits require them in a food of 10. They are more than 8,000 years old and are resistant to cold
It is estimated that the origin of chickpeas, both for its consumption and its cultivation, dates back to about 8,000 years ago in the Near East area. In addition, their cultivation cycle is 100 days and is done mainly in the winter months, since they are resistant to cold and need less water than other legumes.

They come from a bush
The bush from which the chickpea grows can reach 50 centimeters in height. It has white or purple flowers, and inside each pod you can find a maximum of two or three seeds. 90% comes from India and Pakistan Although chickpeas are grown in many places, 90% of world production is concentrated in India and Pakistan. Although it should be noted that Spain is one of the most important chickpea producers in Europe.

Types of chickpeas and where they are most used
There are different varieties of this legume. In this context, the Castilian chickpea is the most consumed throughout the country, while the milky white chickpea is very po[CENSORED]r in Andalusia and Extremadura. We also have the Andalusian venous chickpea, which has an intense flavor, and the Pedrosillano, which is small but very tasty.
